This unique cask finishing process reveals a whisky that’s vibrant and tropical, yet beautifully complex. Hints of ripe bananas, vanilla, subtle pecan biscuit and toffee peanut brittle.

30ml Colour Collection 12 Years Old
5ml Valdespino Red Vermouth
5ml Valdespino Fino Inocente
Ice ball

1. Add all ingredients to a rocks glass with ice ball or large ice block. Stir to combine.
2. Pair with citrus-cured mackerel, complemented by bottarga, fresh orange or lemon slices and smooth mackerel velouté.


30ml Colour Collection 15 Years Old
20ml lemon and lime juice
5ml Apricot liqueur

1. Add all ingredients to a mixing glass with ice and stir to chill. Strain and serve in a coupe glass.
2. Pair with caramelised apple rosette, complemented by sheep milk toffee and crumble.


30ml Colour Collection 18 Years Old
10ml Red apple and Albariño mix

1. For the Apple and Albariño mix: Blend 2 slices of red apple with 60ml of dry Albariño wine, strain and refrigerate.
2. Add 30ml Colour Collection 18 Years Old to a mixing glass with 10ml of the apple mix and stir over ice.
3. Strain and serve in a narrow white wine glass.
4. Pair with filo tartlet, filled with chicken parfait and decorated with buckwheat.
SHERRY SEASONED OAK CASK
The exceptional oak casks are meticulously seasoned with the finest sherry from Jerez de la Frontera, Spain. Once perfectly matured, they embark on a tranquil journey to Speyside, Scotland, where they are then filled with the new make spirit.
